Every Thursday the sleepy highland village of Saquisili rubs the sleep from its eyes, and puts on one of Ecuador’s most colourful open air markets. It’s a great place to get swallowed up by the throngs of farmers flocking to haggle over cattle, and local villagers stocking up on fresh produce. The village is less than an hour by bus from the town of Latacunga, a regional transport hub around two hours south of Quito.
